Some ideas: 

1) you want to calculate variogram map on the mask (check
"Variogram maps" in Chp. 2.4 of gstat manual)

2) you need a mask in one of the format supported by gstat. Format of
ARC/INFO ASCII grid is quite easy (app 3.1). You have then somehow
convert it to gnuplot format (help splot matrix, help contoru help
surface).

3) or you can use GMT (http://www.soest.hawaii.edu/gmt). The support
for GMT grids must be complied in gstat, but then you can make nice
isolines plots and 3d views directly with GMT.
